S’mores Bars

Mmm mmm, these are good! I have had these starred in my google reader forever, but didn’t want to make them in fear of eating the whole pan :). We had some friends over for dinner (who are also fellow ‘smores lovers) and I thought this would make a perfect dessert. Next time (and there will be a next), I think I will add more marshmallow.

Smores Bars

½ Cup (1 stick) butter or margarine, softened
¾ Cup sugar
1 egg
1 tsp vanilla extract
Cups all-purpose flour
¾  cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
4 Milk Chocolate Bars (I used semi-sweet chips)
1 cup marshmallow crème

Preheat the oven to 350o. Grease an 8-inch square baking dish. Beat butter and sugar in a large bowl until light and fluffy. Add egg and vanilla, beating well. In a separate bowl stir together flour, graham cracker crumbs, baking powder, and salt. Add dry ingredients to the butter mixture, beating until blended.

Press half of the dough into the greased baking dish. Arrange chocolate chips over dough. Spread with marshmallow crème. Finally, scatter remaining dough over marshmallow, carefully pressing to form a layer.

Bake 30-35 minutes or until lightly browned. Cool completely before cutting into bars.

These look so delicious and not as messy as the traditional smores! 🙂
