Spicy Garlic Wings with Blue Cheese Dip

My husband loves HOT wings. I am not particularly fond of ridiculously spicy hot wings, but I do enjoy their milder version. Since it was football Sunday I thought I’d treat him to a version I knew he would love. Spicy, Blue Cheese, and Celery – Oh my! He was in heaven.

Spicy Garlic Wings with Blue Cheese Dip


For the wings

1 Cup Frank’s hot sauce

Cup Vegetable oil

1 tsp sugar

1 tsp garlic powder

1 tsp course ground black pepper

½ tsp cayenne pepper

½ tsp Worcestershire sauce

1 egg yolk

2 tsps water

2 lbs chicken wings


For the blue cheese dip

½ Cup sour cream

½ Cup crumbled blue cheese

½ Cup mayonnaise

1 Tbsp white wine vinegar

1 clove garlic, minced



For the wings

Combine hot sauce, oil, spices and Worcestershire sauce in a small saucepan. Heat sauce over medium heat until boiling, reduce heat and simmer 5 minutes. Remove pan from heat and allow to cool for 10 minutes.


Meanwhile, vigorously whisk egg yolk with 2 tsps water in a medium bowl for about 2 minutes. Whisk in cornstarch until dissolved.


Drizzle sauce mixture into egg yolk mixture while whisking constantly. This creates an emulsion that prevents the oil from separating.


Combine all but 2 Tbsp of sauce and wings in a large covered bowl or Ziploc bag. Seal the container or bag and let marinate at room temperature for a half hour. When marinating is finished, drain marinade and discard the bag.


Place wing pieces on the rack of a broiler pain. Broil 4-5 inches from the heat for about 5-10 minutes per side. Remove from oven and baste with reserved marinade. Serve with celery sticks and blue cheese dip


For the blue cheese dip

Combine sour cream, mayonnaise, blue cheese, vinegar, and garlic in a food processor and process until smooth. Cover and chill until ready to serve.
