Blueberry Crumb Bars

Just like everyone else I am enjoying blueberry season while it lasts. I couldn’t decide if I wanted to make these crumb bars or a crumb cake at first, but boy am I glad I decided to go with these. These are FABULOUS. Joe loved these because they reminded him a lot of his favorite treat – lemon bars, because they are very similar in taste and texture. These have a wonderful lemon taste added by the juice and zest – it really compliments the blueberries perfectly. I took half of these bars to work to share with co-workers, and they couldn’t stop raving about them. I left the other half at home for us to enjoy! J

Blueberry Crumb Bars


1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup cold butter (2 sticks or 8 ounces)
1 egg
1/4 teaspoon salt
Zest and juice of one lemon
4 cups fresh blueberries
1/2 cup white sugar
4 teaspoons cornstarch



Preheat the oven to 375 and grease a 9×13 baking dish.


In a medium bowl stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in the salt and lemon zest. Using a fork or pastry blender, incorporate the egg and butter. Mixture will be crumbly. Pat half of the dough into the bottom of the greased baking dish.


In another bowl stir together the sugar, cornstarch, and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture over the crust. Top with remaining crust.


Bake for 45 minutes in a preheated oven (or until tops are golden brown). Cool completely before cutting into squares.
